Your personal chef Vince Guccione's recipe for Muffaletta Sandwich & Salad.

Nutritional Value:
(Serves 4)

650 calories
250 fat calories
250 carbohydrate calories
150 protein calories

Cost: $22.00 ($5.50 per serving)

What you will need to make this meal:

One round focaccia bread
1 1/2 cups of Caponata *See Note
1/3 Lb. Genoa Salami
1/3 Lb. Mortadella
1/3 Lb. Capacola
1/3 Lb. Mozzarella (Whole Milk)
1/3 Cup Pepperincinni's
4 Tbs. Olive Oil
2 Tsp. Balsamic Vinegar
1/2 Cup Green Olives (Sicilian)

Optional:
Parmesano cheese, supprosata, roasted peppers, zucchini papardelli (thin slices) 

Step 1: Slice Focaccia Loaf Horizontal
Step 2: Spread with olive oil on top and bottom. Then spread caponata on top and bottom.

Step 3: Layer meats and cheese. One layer each (5 layers total). Then layer optional items.
Step 4: Put top on, then tightly wrap with plastic. Place in refrigerator with a plate on top. Keep cool for 3-4 hours.  
Step 5: Remove and bring to room temperature. 
Step 6: Slice like a pie in wedges. Serve with soup or salad. Vince recommends Minestrone or Lentil Soup and Romaine salad. Another yummy option? Escarole with Gorgonzola Ranch. 
Note: Muffaletta has its origins in New Orleans, but is made from an Italian recipe using Caponata. That's a sweet/sour relish of eggplant, tomatoes, celery, olives and raisins.
It's built on a loaf of focaccia bread using Italian salamis and cheese. This sandwich has a shelf life of 1-3 days. Great for picnics!
