After delays due to the slowing economy, two Fresh & Easy stores - one in Palm Springs and the other in La Quinta - will open in
the coming months, a spokesman confirmed Monday.
A Fresh & Easy Neighborhood Market will open March 10 at Sunrise Way and Tahquitz Canyon Way in Palm Springs, said company spokesman Brendan Wonnacott. The other store is to open April 14 at 78130 Calle Tampico in La Quinta, Wonnacott said.
Fresh & Easy is in the process of hiring around 25 people for each store, according to Wonnacott.
The La Quinta store sat vacant for nearly a year - part of the company's policy to build stores but leave them empty until economic conditions improved.
The Cathedral City location at 30025 Date Palm Drive opened Sept. 24.
Fresh & Easy, a subsidiary of the British-based retailer Tesco, aims to provide food from local sources and markets itself as a neighborhood store that provides fresh, wholesome food at budget prices.
